Unfortunately, this is just a part of Haypi chat. Seeing as it hasn't been fixed (in any server), one can presume that it cannot be fixed without an effort or the resources that is not worth the result.

I'm on s101, 103, 105 and 107. S101 is the only server that has major chat problems. Messages don't show up for 10secs and chat eats at least half of the messages :/

Well, the 2-20 seconds before a message shows up is normal, but typically it only eats 1 in 10 or so messages. Try bringing it up in an email to support or a message to Angela. There should be no difference in coding between the servers, and so it might not be a problem that can be so simply "fixed promptly."

EDIT: The message eating happens everywhere; the more traffic, the more messages that never show up. Take this screenshot of a player from S79 for example:

You should go to s101 and see for yourself its been like this for months. I've talked to support about it and they have fixed it a few times but the fix is short. Then it goes back to major lag and chat monster. So ppl get fed up and don't chat like they used too. I hope its fixed soon :'(

Yeah it is pretty bad...s101 is one of the worst..
There are brief periods (no more than a week) where chat works, then its horrible again.

My server never does this. Of course, it is a new server after the merge. I am on quite a while though.
