Hi,

I finally get 135 monsters and received Leviathan Scroll,
My question is, if I sacrifices all S grades monster, my Leviathan be a S grade as well?

Yes, if all your monsters are S grade, your newly synthesized monster will be S graded too.
However, keep in mind that grades are in letters, not in numbers with decimals. It may happen that one or two stats become A+ because all sacrificed monsters had barely enough to get S grade tier on that stat.

However, the difference in actual stats at Level. 60 will be 0~1, so it's neglectable in my opinion

Good to know, I will breed two S grade to make them perfect S.

You can ensure this by breeding two pure A+ or higher and use Blessing. This will definitely give you an S offspring with the highest possible decimal stat.
