What's a good monster to up teach pod too?

Whatever one you use most that's bred as high as possible. If you have a legendary that would be best but a strong epic would do.

Almost any type can learn pod. It make a strong monster even stronger.

Suggestion:
Any OEL/Levi/setanic/gryphon/hippo
Rhor
Neon
Draco
Vertedearth
Flight
Meniss
And the list go on

If its ur first pod i suggest to gie it to S scythe or S flight / Neon , if u have egg legendary it will be on it also ...
To me i gave my 1st pod to flight , 2nd to meniss , 3rd to scythe , keeping 4th for my coming gryphion ...

It varies on how far you are in the game.
When I started, I taught my C Draco PoD, and it helped me out big time in Sealed Space and the Ladder Tournament.
I think I grew from 8x to 2x purely by using PoD Draco in Ladder !
These days, however, with everyone getting free Epics from random places, I wouldn't recommend giving it to a Non-S ranked Epic/Legendary monster.
Any Epic or up that is S ranked should be atleast a decent choise for PoD.
