Am I the only one that boss one-hit all my mobs

The good thing is, your monsters always have priority and they don't miss (though, neither does the boss). Bring on your hardest hitters!

I think that that's the idea. They have the talent 'Invincible' as well.

I don't believe it should be a problem, though. You have 24 hours to kill the boss before you can encounter another and because it's similar to team mode, it shouldn't be difficult to get it down to 0 health during those numerous attempts.
However, if you want to get it done quickly, as someone already suggested in the forum, equip your monsters with Healing Potions to get an extra attack there. Also, note that Invincible stops Resurrect from activating - like Penetrate!
