Judging from that, I'd definitely set for Poison Leaves, as it'll cover two popular elements.
However, facing a Earth monster could show to be a problem. Earth has a high ATK, and Psychic has a low DEF, so you'll be vulnerable! I don't know about you, but I always try to swipe Lightning away ASAP, as they're extremely strong but have a low DEF.
Perhaps a build like this :

Monster : Purrfection
Talent : Yoga
Skills : Massive Boulder, Poison Leaves, Mind-Bending, Fire Bomb

This would cover Earth, Water, Lightning, Fire, Plant, Ice and Ghost, leaving you with Psychic, which can't be covered by a Psychic monster and Physic, which has, as far as I know, no elemental (dis)advantages (might do in The Lost Tower).

Psychic is strong to ghost and ghost strong to psychic, but their aren't many strong ghost skills, except cunning. But leaves you vulnerable because it has you go after your opponent. I have a vertedeath with Pressure, Foresight, Soak and Cunning and PoD but the AI never uses it correctly and hes only good for manually using him in PvP or the actual levels.

Yea, I know that feeling @_@.
Monsters like that are only useful for PvP and maps, but worthless at AI activities.
