Cats or cav could probably own an army of inf provided they had blockers. The only way a pure inf army would become even remotely feasible would be in extremely high numbers (hundreds of thousands). Though if you're going to go to that high of an expense, why not go with cats or cavs? There are proven, tested strategies for both of those. For example, 200k inf = 20k cats in terms of crop consumption. The latter army could kick some serious butt with very few losses. The retrain time on a pure inf army would be obscene. You'd probably lose 2-5k each time you farm a fort, perhaps 10k if it has its traps an turrets. Losses of 50 to even a hundred thousand would not be impossible against a high-level player with a huge army and lvl10 turrets. Sure, this loss could be reduced with meatshields, but it could theoretically take you a week to recover from a battle you won. And as stated before, you wouldn't get much prestige.
Infantry may be the most efficent unit, but that does not make them the most practical.
