It all depends on your stats, you need cavs with max speed and then depending on how you distribute the points (either into attack or def) then you will have different need, you lose more cavs with high attack but you won't need as many to farm fort, with def you will lose minimal amount of cavs but you have to make sure you send enough.
With reasonable tech level, a player with high speed and high defense will need around 70% the number of cavs per infantry stationed in the fort. eg. level 1 fort need about 1400 cavs and level 10 fort need around 125k.
Keep in mind that is with 100 speed and at least 50 points into defense with max level equipment for attack and at least level 8+ for tech.
If you use attack then you can use around 45% the number of cavs for inf stationed. so 900 cav for level 1 and 85k cav for level 10.
The same rule is applied to cats too, yes you need 10% cats per infantry if your attack is low, but if your attack and fortune is high you only need around 4-5% cats per infantry stationed (eg. 100 cats for level 1 and 8k cats for level 10)
You need to test this out for yourself however, because everyone's setup will be different.
