My web browser totally just bugged on me with a long drawn out response, so this one will be more to the point.
Lvl 10 turrets will kill 76 cavs per round, per turret, this means:
1140 Cavs per round if there are three rows (the longer you can keep them alive, perhaps by sacking 1 cav, 1, inf, 1 archer and 1 cat, they will continue to lose 1140 per round... this adds up for the cost of four troops that you wont even lose prestige for).
Once they make it to the turrets, they kill the first row and they will lose 760 per round.
With one row of turrets you are taking out 380 per round.
This means, with lvl 10 turrets, sacking four units, you stand to kill 6840 cavalry with those turrets.
With lvl 10 traps, the maximum you stand to kill is 540 (this is with 15 lvl 10 traps, and then you have to rebuild them), and if you are thinking of convince as a viable option, think about how fast those cav attacks hit. a 9 second follow up attack means that you not only lost two battles, but now you lost 432 prestige. Yea, not much, but it's a slap in the face. I do it all the time.
Traps are great until you get to lvl 9 or 10 turrets with max shooting, then there is no question, as they out-range catapults, and kill 255/76/306/85 PER turret, PER round.
In conclusion Traps <<<<<< Lvl 9-10 turrets with lvl 10 shooting.
Use traps until you have good (Lvl 9-10)turrets.
