Ideally, if all the enemy's troops could be in range at the same time, I'd want to take them out in this order:
1) Cavalry (because they're fast)
2) Catapults (the deadliest)
3) Archers (can kill some of of your troops if there's enough of them)
4) Infantry (only pose a real threat if you are facing so many that they might not all be dead before they reach your guys)
However, as said above, there's no single battle strategy. If your opponent puts all his troops on wait behind a generous amount of turrets, things get trickier. If your range is higher, you should be able to take out everything with minimal losses. But if the other guy has a higher range (or high-level turrets), you could be in for a serious pounding. In that case, you'd want to sacrifice some of your infantry or archers by marching them in front of your cats.
