hard to tell depends on ur attack/defense stats
and on the stats of ur enemy
but 1 lvl 10 turret takes like 85 cat in 1 attack

So is it worth having them if lvl 10 take and most players have like thousands of cats. Have just wasted all that time and resources

Yes it is worth it since you first line of turrets get 2 attacks in before cats get in range so you initially kill 860 and then 2 more rounds of 430 which means they are already down around 1290 cats before they even make it to your army. If a high level player looking for prestige see's this they will wait in their starting point for the 20 turns to avoid taking casualties since there is no point losing any part of the army unless there is prestige to gain

20 turns is a common strategy for player vs player when both people wait there troops. (it ends the battle with no prestige gain or loss after 20 turns)
sometimes a player may choose to not call back troops from a hunt if they are baiting and can easily destroy the attacker, so they pm or message the attacker to just wait troops to save them.

yep, get them all to 10, i know it will cost alot, but it will help in the long run i think!

Is it really over 500k to upgrade tech to 10? I have all lvl 6 and upgrade tech to 7 is 64k

it ends up being around 1.2 million total. its 256,000 for 9, 512,000 for 10. (divide by 2 each time for upgrade cost going downward) 7=32,000 etc.
